September 9th was my wedding anniversary. And the night before, my husband began getting things ready for the anniversary dinner he was preparing us.

I watched in awe as my husband created a masterpiece!

Overnight Salad Recipe

Ingredients:

  • 1 large cucumber, peeled and sliced
  • 2 large tomatoes, chopped in big sections
  • 1/3 of large onion, sliced in rings
  • 1 bottle Italian Dressing
  • water

Directions:

  1. Peel and slice cucumber. Drop in a bowl.
  2. Chop large tomatoes into big sections and add to the cucumber.
  3. Slice about a third of a large onion (or more, if you want) and add to the mix.
  4. Pour entire bottle of Italian Dressing.
  5. Fill empty dressing bottle about half-full of water and add that.
  6. Stir to mix flavors and ingredients well.
  7. Cover and sit in fridge overnight.
  8. Take out next day and enjoy!

You could also add other veggies from your garden. Broccoli would be awesome. I can also see okra and/or corn in this as well.

I’m one blessed lady to have a husband who loves to eat healthy. He loves his meat, but he also craves his veggies. I’m so proud to be the wife of a man who eats so well!

Have you ever made overnight salad? What do you put in yours? Will you be making this? Or have you made something similar? A penny for your thoughts!
