So, it’s Valentine’s Day….
Maybe you ignore eating healthy on this day or perhaps you try to eat mindfully even on holidays.
Or, you’re in a slump and don’t feel like baking cookies and cakes and you don’t want to traipse out to the stores and brave the holiday crowds either.
Whatever you decide, I think you might very well enjoy this healthy version of chocolate pudding complemented by pink Jordan almonds (gotta have some Valentine’s color in there somewhere — and my favorite color is pink so that explains it).
Valentine’s Day Chocolate Pudding Recipe
Ingredients:
- 1 cup Chobani Greek yogurt (I used plain, but vanilla would be better if you have a super sweet tooth but it has to be Greek because of Greek yogurt’s thickness.)
- 4 teaspoons cocoa powder (I used natural, unsweetened by Hershey’s.)
- 3 teaspoons raw honey (I used Tropical Traditions brand.)
- 12 drops liquid vanilla stevia (I used NuNaturals brand.)
NOTE: I like my healthy chocolate pudding as shown above. If you have a strong sweet tooth, just taste as you go along and add extra sweetener as you see fit — you can even add sugar if that’s what you have on hand.
Directions:
- Put yogurt, honey, liquid stevia, and cocoa powder in a bowl. Stir until combined and smooth.
- Place your chocolate pudding in a decorative bowl — or even pretty glass — and add pink Jordan almonds around the edge of your dish. You could make a heart on top of your pudding, too!
- Make extra if you’re serving to your sweetheart.
If you just don’t like Greek yogurt, you can follow the recipe to my other healthful chocolate pudding. You’ll have to drag out your blender and add a couple more ingredients — but it’s worth it!
