The other day I stopped by a friend’s house. As our husbands began chatting, she motioned to me.

“Let’s go pick some greens,” she smiled.

I heart greens. So I moseyed quickly with her to her garden. I wish I had taken my camera because it seemed her entire garden area had been overtaken my mustard and turnip greens!

Well, not the entire space, but a huge section of it.

We caught up on life as we each picked greens. By the time we finished, we both had a sackful a piece – which she generously gave to me.

Gardening is about so much more than walking lightly on Mother Nature and putting food on the table; it’s about heart, friends, family, sharing, memories.

My friend gave me more than greens, she gave the gift of love.

Day after day, my husband and I have enjoyed the greens several different ways. Hating to waste, I looked at the bowl of leftover greens in my fridge this morning and the following omelet recipe was inspired….

 

Green Gifts Omelet Recipe

Ingredients:

  1. 2 farm fresh eggs
  2. Splash of milk (or cold water)
  3. Salt to taste
  4. Diced onion and garlic (optional)
  5. Cheese of choice
  6. Leftover (cooked) greens of choice (mixture of turnip and mustard for me)

 

Directions:

  1. Heat a skillet over medium heat.
  2. Add a dab of butter and small drizzle olive oil.
  3. Break eggs into a bowl.
  4. Add splash of milk.
  5. Whisk together.
  6. Tilt handle of skillet until melted butter distributes evenly.
  7. Pour egg mixture in.
  8. Add greens and cheese.
  9. Add any other toppings you desire at this time.
  10. Put lid on skillet.
  11. Once the egg starts getting done, take a spatula and flip over in half.
  12. Put lid on again.
  13. If you wish or it looks like it needs it, flip omelet over again (this is great if you love a golden omelet).
  14. Plate up and enjoy.

This hot omelet warmed my tummy and soul today, and reminded me of my friend’s generosity!
